Aromatics in summer are a real must with their instantly recognizable fragrance that will give you a taste of our potted Liguria. Added to salads and meat or fish dishes they will give an extra kick to your beach lunches or country tables.

The sunny season becomes the ideal time to stock up on flavorings and start storing them for later use throughout the year. August in particular is the month when we can harvest them and set them aside for the winter.
How then to store herbs?
1) Aromatic popsicles.
A few simple ingredients that surely everyone has at home and that's it: an ice tray, good extra virgin olive oil and a handful of herbs of your choice.
Wash the herbs and roughly chop them so they fit inside the cubes, coat them with oil and freeze. You will have obtained mini flavored popsicles, perfect for any occasion and ready in two seconds.
2) Dried aromatics
If you prefer another method, don't worry, you can always dry the plants to store them in airtight glass jars or paper/cotton bags so that you can preserve all the aroma for later use when most needed.
Pick the plants on a sunny day, preferably at a time away from any rain, make bunches and let them dry in an airy, dry place. Once dry store them in containers and use as desired.
3) Salt and flavored oil.
The third tip we give you today is to store your aromatics in salt or oil, the ideal solution for handy flavored seasonings that will give your cooking an unmistakable flavor and aroma.
Probably the oldest preservation method ever, it is an easy, healthy and ecological remedy that will allow you to flavor your dishes in a few simple steps while also being careful about your figure.
All you need to do is chop up the aromatic herbs, mix them with coarse salt and let them sit for a little while.
Same procedure with the oil, a condiment prepared throughout Italy with some regional variations: you will only need to fill a glass bottle with extra virgin olive oil in which to leave the aromatic herbs you have chosen to infuse, every now and then you will need to add a little oil to help absorb the flavor.
